Goat Milk Rice Pudding with Rose Water and Cardamom
Prep time: 30 minutes. Servings: 3
Ingredients
1.5 cups whole or low-fat goat milk, fresh or made from powder
⅓ cup short-grain rice, sushi or arborio
½ teaspoon cardamom
2 tablespoons sugar
1 teaspoon rose water
Apple sauce to taste
Directions
Combine goat milk, rice, cardamom, and sugar in a medium-sized bowl. On medium heat, bring to a boil. Let simmer for 20-25 minutes, stirring gently and constantly, like a risotto. Once the rice is done and the pudding has thickened, turn off the heat. Stir in rose water. Distribute pudding into two bowls and add apple sauce to taste.
